Any examples, experiences, ideas in relation to Canvas BM applied to the gastronomic sector?

Hello everyone!

My name is María Luz, from Argentina, and I'm a posgraduate student of Corporate Finance at the ICDA Business School at the Catholic University of Córdoba.

Currently, I'm working on my thesis (the topic is the development of the Canvas Business Model for a start up project consisting of a bakery/coffee shop). 

I read the Business Model Generation book (it was quite enlightening!) and now I'm trying to find examples, experiences and info related to cases of the gastronomic sector. 

Any contribution will be apreciated!
